Copycat Nature Valley Granola Bars

This is another Chocolate Covered Katie recipe that I adapted.  My kids love the Nature Valley granola bars in the green box so I was excited when I found this recipe.  I was even more excited when my kids responded positively to this recipe.  My kids are my biggest critics of my recipe experiments, especially those that attempt to copy one of their favorite packaged products, so the fact that they loved these bars and begged to take them in their school lunches every day is a testament to just how “copycat” they are.

As with most of the Chocolate Covered Katie recipes that I adapt I replaced the stevia and agave with honey and used butter instead of coconut oil.  I also used crushed rice cakes in place of the Rice Krispies.

Copycat Nature Valley Granola Bars

1 cup rolled oats
1/4 cup crushed rice cakes
3 tablespoons oat flour (grind oatmeal to a fine flour and then measure)
1/4 tsp salt
1/4 tsp baking soda
1/2 tsp pure vanilla extract
2 tablespoons butter
4 tablespoons honey

Preheat oven to 350 F. Combine dry ingredients, then mix in wet. Transfer to a baking dish (lined with parchment paper), and press down. Squish HARD. Cook for around 18 minutes. Wait at least 20 minutes before trying to cut into bars.
