These bars are so easy and so delicious. They are the perfect combination of salty and sweet and make an excellent after school snack. I adapted this recipe from one I found on Chocolate Covered Katie. The original recipe calls for Rice Krispies. Those are not always easy to find in my part of the world so I just used crushed up rice cakes. The sweetener used in the original recipe is agave but I used honey and loved the results.
No Bake Peanut Butter Pretzel Bars

1 cup crushed rice cakes
1/2 cup packed oat flour (just grind oatmeal to a fine flour and then measure)
1/4 tsp salt
1 tsp pure vanilla extract
5 tablespoons honey
3 tablespoons peanut butter
Handful of broken up pretzels
Combine all dry ingredients. In a separate (large) bowl, combine wet ingredients and stir to form a thin paste. Pour dry into wet (not the other way around), and stir until evenly coated. Line a baking dish with a large piece of wax paper and pour the mixture into the dish (I used a small 6 inch square Corningware dish). Fold the extra paper over the mixture and squish down as hard as you possibly can! Use a heavy object to really press it down. Stick the mixture in the fridge or freezer to harden before cutting into bars. Makes 6 bars.
